Boondi is a well known very sugary dessert from the Indian subcontinent. Boondi is also very famous among us Sri Lankans.
Because of its sweetness boondi can only be stored for around a week. So some makers add preservative ingredients. But some of those ingredients cause cancer. So here we present you a simple recipe to make some sugary boondi at your home. It will take only 10 minutes. Try this boondi recipe and you will never buy boondi from sweet shops.

Special notes
• When mixing the batter it’s good to use a whisk to prevent any lumps.
• When you put the fried Boondi to the sugar syrup, make sure that it’s a little bit hot.

Ingredients

Boondi batter
 1 cup Plain flour
 ¼ cup Chickpea (Kadala) Flour ¼ cup (20g)
 1 tsp Baking powder
 ¼ tsp Salt
 Water
 3 drops Food coloring
Sugar syrup
 250 g Sugar 1 cup (250g)
 60 ml Water
 Vanilla
Other
 Coconut oil
 1 tsp Ghee

Directions

Boondi Batter

Add Plain flour, Chickpea (Kadala) flour, Baking powder, Salt to a strainer and sift it to a bowl.

Mix it well.

Now add some water and mix, more water and mix until it becomes a smooth batter.

Add food coloring to the batter and mix well to make it even.

Now the batter is ready.

Sugar syrup

Put sugar (1 cup), water (¼ cup) and Vanilla (1 tbsp) into a cooking pot.

Turn on the cooker and mix the ingredients until it becomes a syrup.

Turn off the cooker when the syrup oozes stringy.

Now the sugar syrup is ready.

Now let’s make Boondi.

Put the Boondi batter into a piping bag.

Heat the coconut oil in a frying pan.

Make a little cut in the piping bag and put a little bit of boondi batter into the heated oil.

If the oil has the required heat the Boondi we poured into the pan will come up.

Now pour the batter, a little bit at a time using the piping bag into the frying pan.

Let poured Boondi batter fry little bit.

Now take the fried Boondi from the pan and put it to the sugar syrup.

Take out the sugar syrup absorbed Boondi and put it on a plate.

Pour ghee (1 tsp) to the Boondi to make it looks oily.

Serve the sugary homemade Boondi to your family.
