Chili paste can consider as the most famous side dish in Sri Lanka. Mostly chili paste is served with fried rice. If stored in an air-tight container chili paste can be left for several months. For a quick dinner, you can make some fried rice and serve with a chili paste. This recipe will guide you to make some delicious spicy chili paste just in 10 minutes.
Special notes
•Before using small shrimps wash it well, dry it for 2 or 3 days in sunlight and fry using a pan without adding any oil. Then crush it to pieces.
•Put the chili paste into an airtight container and keep it for later use.

Add 10 - 15Tbsp of coconut oil into a heated pan.
When oil heats add chopped ginger and garlic to the oil.
When it fries a little add cinnamon and pandan leaves.
Now add chopped onions and mix well.
When onions turn into light brown color add small shrimps and mix well.
Now add salt and let the shrimps fry well.
Now add chili flakes, mix well.
Then add sugar and 3Tbsp of soya sauce.
Stir it until it fries well.
