Hoppers are a most selling food from diners in Sri Lanka. Everyone likes to eat hoppers. Hoppers are served with a katta sambol. But if we tried to make hoppers at home sometimes we can't make hoppers like the ones we buy from diners. This recipe will guide you to make hoppers properly at home. It will look exactly like the hoppers you buy from the diners.

Ingredients

Take a large bowl and add egg, salt, and sugar.
Add some milk and mix the ingredients well.
Mixing, add rice flour and milk little by little until it becomes a smooth batter.
Cover it using a kitchen towel and leave overnight.
Heat a hopper pan and spread some oil in it using a paper tissue or piece of cloth.
Pour some hopper batter into the hopper pan and rotate around.
Close the lid and cook the hopper in very low heat.
After around 1 or 2 minuter using a spoon, you can take out the cooked hopper unbroken.
Pour some hopper batter into the oiled pan.
Close the lid and leave it on very low heat until the hopper is half cooked.
Now add the egg to the top of the half-cooked hopper.
Rotate it around lightly.
Add some salt and pepper powder to suit your taste.
Close the lid again and leave it around 1 minute until it cooked.
After around 1 or 2 minuter using a spoon, you can take out the cooked hopper unbroken.
Hoppers are ready to serve.
