Parata is a well known Indian flatbread. In India, Parata is a famous street food. Usually, Parata is served with some spicy gravy. There is plain and stuffed paratha. Usually, we see plain Parata in Sri Lanka. Nowadays there is a frozen paratha to buy in supermarkets. But it is not as tasty as the newly made parathas. So here is a simple recipe to make some Kerala parata. Made some and serve it warm for tonight's dinner.

•You can use butter instead of ghee if you like.

Ingredients

 500 g All purpose flour
 1 tsp Salt
 3 tsp Sugar
 50 g Ghee
 1 qt Egg
 ½ cup Milk
 Water

Directions

Parata dough
1

Add 500g all-purpose flour to a deep wide bowl.

Then add salt and sugar, mix well.

Now add the egg and ½ cup of milk to the mixture and mix well.

Add 2Tsp of Ghee, mix well.

Finally, add water little by little and mix and knead it well until it becomes a soft ball.

Now cover the dough by spreading ghee around it.

Now cover the bowl and leave the dough for around 15 minutes.

After 15 minutes, knead the dough well again.

Now add some flour to a wide surface.

Put the dough on the surface and knead it to mix well with all-purpose flour.

First method.

Tear the dough into small balls.

Spread some ghee on top of the balls.

Now add some flour to the wide surface again and put one small ball on to it.

Using a rolling pin, roll the dough ball until it flattens.

When it flattens almost like a sheet put some all-purpose flour on the sheet and spread.

Now spread some ghee on sheet.

Using a knife cut thin lines in the dough sheet.

Now using your hands roll it from one side to the other.

Spread some ghee again on the rolled dough.

Now take one side in a hand and roll it like a Swiss roll.

Now tuck the other end into the bottom.

Continue on.

Second method.

Tear the dough into large balls.

Spread some ghee on top of the balls.

Now add some flour to the wide surface again and put one large ball on to it.

Using a rolling pin, roll the dough ball until it flattens.

When it flattens almost like a sheet put some all-purpose flour on the sheet and spread.

Now using a knife cut it into two pieces.

Now take one side from a hand and roll it like a Swiss roll.

Spread some ghee on top of the rolled dough.

Cooking Parata.

Take one rolled Parata and thin it using hands.

Heat a pan and put one thinned Parata on to the pan.

Cook it turning sides in very low heat until brown dots appear on the Parata.
