Pancakes are mainly in two different types. As Sri Lankans, we know about the coconut stuffed crepe also-known-as Sri Lankan pancakes. Pancakes are very sweet and suits as a snack for tea times. Mostly children like to eat pancakes because of it's sugariness. So here is a simple recipe to make some sugary Sri Lankan pancakes on your own. Try it out...
Special notes
- Eggs are not necessary
- You can use water instead of coconut milk

Ingredients

Take a deep bowl, add coconut milk, egg, some salt, and turmeric powder.
Using a whisk beat the batter gradually adding flour.
Add 3/4 of sugar, vanilla extract and a pinch of salt to the grated coconut, mix well.
Now heat a saucepan and add the remaining sugar to the pan to caramel the sugar.
When sugar is caramelized add grated coconut and mix well.
Turn off the cooker.
Heat a pan and spread some coconut oil using a piece of cloth or a tissue paper.
Now pour some batter to the heated pan and swirl the pan to spread the batter evenly and to make a perfectly round shape.
When it cooked put the pancake into a plate and put some filling and rolled it quickly.
